Coban is located in Guatemala’s central part and is considered to be the center of a large region of coffee farms.


Region is rich in clay and calcareous soils. Crop is harvested from December to February.


This coffee is honey processed.


Honey is one of the 3 main coffee processing methods. Identical to the washed coffee processing method the cherries should be depulped as soon as possible after picking, usually between 8 to 12 hours. But almost all of the fruit mucilage is still left on the beans. After depulping, the beans are taken to dry.


Depending on the type of honey processing, the drying process and time can be varied. Therefore fermentation time is also varied. The drying of the beans usually takes for about 2-3 weeks until the beans reach to the desired 11% moisture level.
